    What are your nostalgic foods?

On special occasions and holidays when I was a kid my grandfather use to buy some pickled herring. We'd eat a jar of it with saltine crackers. I lost my grandfather last year, he lived well into his 90's, (probably from all the pickled fish) I still buy a jar sometimes on holidays and...

    Eastern PA, D.C, VA Trip

We'll be traveling to the D.C. area this week to visit family. I'm planning on driving through Eastern PA, going to D.C. for a couple days, and MD. Are there any must stop breweries in these areas? :mug:

I think I might brew today...

I'm home with the little one, it's raining and gross out, I have a spare 5g carboy and a quarter liter of yeast slurry I saved from bottling last weekend... Looking through my grains and hops...I have 4 oz of cascade, 2 oz of Simcoe, 1 oz of perle, and 15lbs Maris Otter, 8lbs...

    Grafting from old trees?

I have a very old crab apple tree that produces great cider apples, unfortunately I don't think it's going to last much longer. The last couple years they've had some pretty healthy looking shoots around the bottom. I was thinking I could find some young wild trees and dig them up, graft the...

    Snowed in! Brewing Beer

Living on top of a mountain has its perks sometimes I guess....Wife and I are snowed in until we can get a family member to come over with a tractor to get us out. I measure 26" of snow on my deck this morning, with another 2-4" expected today. Anyways, I decided to brew! It's going to be...

    Cider with Saison yeast?

I just bottled a Honey Saison Beer I brewed a couple months ago, is there any reason why I shouldn't dump 5 gallons of fresh UV treated cider on top of the yeast cake? Cheers!

    Thick mouthfeel low mash temp?

I brewed an Imperial Rye IPA that tastes great, but I think it's too "thick", more syrup like than water I guess. I had some people sample it without telling them and asked for opinions. Out of four people two recognized the thicker consistency. I guess I'm confused, always associated more...

    Large fermentor for cider?

I'm fixing up an old cider press, and there are a LOT of wild apples this year, Anyways, I only have four 6 gallon carboys and those are generally dedicated to beer (which they are now) and I guess it's possible we get upwards of 100 gallons of cider...I'm looking for something we could ferment...

    3711 temperature?

Brewing for the first time with 3711. If i put it in my basement it would ferment around 66 this time of year, if I left it upstairs it would be more like 74-76. Anyone have any insight on what my be better? does it matter? I have a Rye IPA bubbling away in the basement with American ale...

    Stuck Sparge Hell!

I just experienced my first stuck sparge after a couple dozen all-grain brews, turned out that my filtering system had come apart (probably hit it during dough in). I ended up having to continually stir around the mouth of the valve to get it to drain....it was pretty painful to watch the mess...

    She made me do it...

I'm brewing a pumpkin beer......I've never been a big fan, but the wife likes them. I guess sometimes you need to sacrifice a brew day for the ones you love. With that said, I may be putting my own spin on it...maybe a rye pumpkin. Happy brew day. :mug:

    Violent fermentation!

Brewed a honey wheat yesterday, airlock was on the other side of the room when I got home from work today, I cleaned up and attached a blow-off tube, and it just blew that off.....what now? I probably need a bigger tube..:tank:

    Cara-Rye?

I've never used it. I bought a pound to add to a Rye Pale Ale and I noticed it's not on beer smith and I can't find a lot of info on it. Does anyone know how it compares to caramel malts? The brew store employee thought it was similar to 40L.

    Yeast Suggestion?

My wife is tired of my hoppy beers (I'm not), so I've decided to be a nice husband and brew something a little milder. I put together a "honey wheat ale" recipe after a little research. I have American 1056, and English 1968 in stock in the fridge, I almost want to try the 1968....I like how...

    Need opinion on yeast

My schedule changed at the last minute and I have time to brew this weekend. I have the ingredients for an Imperial IPA I was planning on doing, but, I didn't have time to make a starter. The recipe calls for a pitch rate of 275 billion cells. I have two smack packs and I also have three...

    Gravity of grape juice?

I've never made wine, only beer, lots of beer, and cider. My father in-law was just given a 5-gallon pail of grape juice, I think it's what the juice came in. He asked me how to make wine with it so I researched it and went over to his house with my best intentions. However....apparently the...

    Carb with honey?

I just got everything ready to bottle a brown ale (2.4 CO2) and I realized I'm about 1/3 of a cup short of corn sugar. I have a bunch of raw honey....has anyone ever used honey to carb? I found a calculator on northern brewers website.....nervous about this though. I assume you would need to...
