    Will a mash-out step improve beer flavor?

    Dealing with keggle thermal mass while chilling?

    When using an immersion chiller, it seems the brewstand and keggle seem to retain a lot of heat and transfer back to the wort as it's chilling. I think a fan on the bottom would help, but not to keen on having the dust flying around the wort. Not too interested in plate chillers...

    do you sniff your glass before first pour?

    Sometimes I rinse my glass before the first pour just figuring there may be some soap residues from washing, but never really knowing. Today I took a sniff.. Eww disgusting! Looked fantastic and spotlessly clean from the wash, but certainly would have ruined that 1st beer.

    Saaz masking oxidation?

    I haven't made many beers that were great past prime. Does anyone else find that the flavor in saaz hops blends nicely with slight aging oxidation? I've had a couple heavy malt beers that took oxidation well, but this is the first time I've seen it in lighter beer.
