    Cider infected with mucus?!

Hi, So a few weeks ago I made another batch of hard cider using a store bought cider. All my previous batches were made with fresh apple cider or apple juice. Anyway, this time I used the cheap stuff. Still pasturized with no preservatives. Well, I used most of the bottle for my hard cider...

    do i need bottle fermentation?

I've been reading a lot about bottle pasteurization. But do I really need to do it? I don't have room in the fridge to cold crash many bottles. Here's what I was thinking - the yeast should consume all the sugars, right? Then when I add priming sugar before bottling it will consume the left...

    need help with head

Ah ok great. I've had crabbies and that has a longish lasting head (for a cider) so I was worried that I was doing something wrong. It's prob from all the artificial ingredients that they add. :P Thanks, guys! :)

    need help with head

hi, I've been making cider for almost a year, many batches. I've finally got the taste down, and it's a lovely color, and clear, but I can't seem to get the head to stay. There's a great head, initially, when poured out of the bottle but it quickly goes away. I've even tried some salt in the mix...

Storage Temp - does it matter?

So, I want to backsweeten my cider with apple juice instead of a non-fermentable sugar. This would mean that I would have to refrigerate it a few days after bottling to stop fermentation. BUT, I don't have the room to store a lot of bottles in my fridge long term. If I refrigerate them and...

    stuck fermentation!

thanks! the recipe called for a 3 week fermentation (but same OG/FG) so I was confused. I actually added some raisins and now it's bubbling away! :)

    stuck fermentation!

It was super active for the first two days. And now nothing. The weirdest part is that I pitched more yeast and it was active for about 12 hours and then stopped again. It's champagne yeast and about 70 degrees. First pitched yeast I put in some nutritional yeast (I ran out of yeast nutrient...

No kick at end - help!

I made my first ginger cider. It was delicious! :ban: But, although we could taste the ginger sufficiently and it fermented and carbonated well, it was a little bitter and there was no "kick" in the end, like you get with beer and hard apple ciders. Obviously I need more sugar to increase...

Cider with real apples recipe needed

Hi, I'm looking for a dry, traditional cider recipe (like strongbow), but made with real apples instead of apple juice. I've been searching, but most use juice instead of apples. In a perfect world, the recipe would be for a 5 gallon kit. Thanks!:mug:

    Need Ginger Beer recipe

Hi, I am new to home brewing. I'm looking for an alcoholic ginger beer recipe. I do NOT mean adding ginger to beer. I mean the old fashioned alcoholic british ginger beer, like Crabbies. http://www.crabbiesgingerbeer.co.uk/about/ I have seen ginger beer recipes that don't require a homebrew...
