Should I take out all this stuff on top?

It's strawberry and all of this stuff floated to the top after I pitched the yeast. It is really bubbling and I don't know if it will effect the fermentation if I get rid of all of this gunk that is on top. It is about a half inch thick. I have been stirring it down but this stuff seems to be...

Can someone please help me with wine yeast?

I started my wine out with a premier cuvee right. Then all of a sudden I realized it was only for a 5 gallon batch for that particular yeast packet. Anyway I added another yeast packet to be sure because I didn't know what the heck to do because I started out with 6 gallons. So my question is...

Bottling wine in Mickey's (32oz) with a plastic screw cap?

Hi everyone. I was wondering if anyone has/had experience with using them 32 oz. beer bottles for bottling wine? I have screw caps that fit those bottles but I am not sure if it is a good idea or not? Any advice would be most gracious. Thanks.

    egg smell?

That's the only way to describe it. I only pitched my yeast this morning. Is this normal? I mean it smells up my house. Bluck. Can I do something about it? Or should I dump and start over?

Lesson learned. The hard way :(

ALWAYS sample the fruit first from the farmer. I just purchased 20lbs. of plums. Came home to prepare. Tasted and they are garbage. Pure mealy garbage. These are black plums. Since I don't waste, and refuse to give them to the ducks or chickens, I am hoping to fix this mess. Literally the...

i have to keep punching my fruit down or ut will overflow!

I am new and used champagne yeast for the first time. Also as a first time I did not put my fruit in a bag. It is free roam in the bucket. I pitched the yeast about 8 hours ago and the lid, just sitting on top, is having a tantrum. But even worse is my fruit is rising and is only about an...

    Strawberry, Guava, Banana wine

I am going out on a limb with a freakish recipe. Fresh frozen strawberries, fresh frozen bananas, and guava paste :) Oh and Oranges for the citric. I did not use a bag this time either. Simply just mooshed everything up except the guava paste since it has so much sugar. I'm letting my moosh...

    How to spice wine?

I'm preparing to make pumpkin wine since they are everywhere. Jack Kellers recipe seems fine, but I kind of want a pie flavor to the wine. Like cinnamon, clove, etc. How do I properly spice my wine? Do I use a cinnamon stick when I transfer to secondary? Or do I pile in extracts? Also...

    how to properly introduce campden?

I did not use the campden before pitching. I am also hesitant to use them when I transfer to a Carboy. I dunno just something in my gut says not to. I am using a fellow members banana heavy bodied wine recipe so I dunno. Lets just say I just don't think I should add them. On another note...

banana wine ABV is at 7.88%

It is still in the bucket and fizzing away. Is this a normal reading 7.88% ABV at this stage? I added the yeast 5 days ago. Is there anything I should do? Or is this just the norm? Thank you for any comments/advice. :-)

    Hola from beautiful Key Largo.

I'm officially no longer a lurker. As a complete newbie to home brewing, and lurking for a long time following a fellow members thread, I suddenly jumped in and started my first 5 gallon batch of banana wine. I've never fermented anything intentionally in the past so I am excited to involve...
