Single infusion mash with under modified malt

I frequently brew a french saison with mostly pilsner malt and ferment it with Wyeast 3711 and secondary with Brett B. I was considering using Weyermann floor malted pilsner, which is slightly under modified. Do I really need to do a multi step mash since I'll be using Brett in secondary? If I...

    Sacramento area bottle shops

I have a friend in Sacramento today that offered to pick up some beer for me. I was hoping to get some Russian River, Firestone Walker, and Dogfish Head; as none of those are distributed in my area. I looked online and found a couple large liquor stores, but I was hoping to get some other...

ISO Bell's Planet Series: Mars IIPA

I missed this release and I'd like to get the entire series. I realize that this came out in August and it's not the style many people hang on to for very long. I have access to a large selection of beer as well as my own versions of Zombie Dust, Sofie, and Saison de Noel. Let me know if there's...

    Help with last minute substitution

I'm making Northern Brewer's Saison de Noel. I have somehow misplaced the 1 lb of D-90 Belgian candi syrup. The estimated OG should be 1.070 and it already calls for 1lb of corn sugar. Should I just add another pound of corn sugar to keep it at 1.070, or will that drastically affect the flavor...

Vinnie Cilurzo's "10 Factors of making hoppy beers"

I've been looking into ways that I can improve my hop utilization and keep coming across links to this article at http://www.brew-monkey.com/articles/Better_Hoppy_Beers.pdf. The only problem is that the entire brew monkey site seems to be dead. I've checked several times over the last few...

    Farmers Market Sales?

I'm wondering if anyone has ever seen nano/micro brew for sale at a farmers market or similar event in their state? I live in North Dakota, where it is currently legal to sell non-malted and non-distilled alcoholic products, provided they are brewed in a licensed and state inspected facility. So...

    Hops didn't come back

I ordered a Teamaker and Fuggle hops plant from Great Lakes Hops last year. They send out a 1 year old crowns instead of rhizomes. I put them both in the ground in early spring in a yard with southern exposure, watered regularly, but didn't use any fertilizer or pesticides. The Teamaker did...

Do I need to wait for the pellicle to fall?

I brewed a 10 gal Goose Island Sofie clone a while back. I split a 1 liter stir plate starter of Belgian Saison I Ale (White Labs #WLP565) and let it ferment out for 3 weeks. Then I split one vial of Brett B (Wyeast Labs #3112) between the two carboys and forgot about it for another 3 weeks...

    A shot Keezer and mildwew/mold

My father-in-law's keezer may or may not have kicked the bucket. For some reason he tipped it over to clean it out and it hasn't been cold since. That sucks all on it's own, but he also placed the 20 gallons of homebrew we made for his daughters wedding back in the warm keezer and left it for a...

    Beers of Ireland

I will be travelling to Ireland at the end of the month. Are there any European beers that I NEED to try? And for that matter, I'm open to suggestions for others adult beverages/food/bars as well. Thanks!

    march pump powered barley crusher

The plastic thread on my march pump broke off. I don't see anyway to fix it, and I hate to toss a perfectly go motor. Would the 1/25 hp motor be enough to power a mill? I've see other builds use a 1/3 hp motor, but they also had to use pulleys to lower the rpm's. Any suggestions? Thanks.

    Did I ruin my equipment?!

A few months ago I brewed a Goose Island Sophie clone with Brett B. I just learned that Brett is used to make sour beers and that many people have dedicated equipment for there sour beers. Will my future beers made in the carboys and kegs I used be funky? If so, is there any way to get the funk...

    Question about Iodophor

I regularly use iodophor to sanitize my carboys. I use a little less than a cap full for each one. The problem is that when I put the cap back on the bottle, the little bit of iodophor that's left will eventually dribble out and onto the bottle. I know it's not a lot, but over the lifetime of a...

    What would you brew?

I want to clear out some of the older grain I have before I order new stuff for the year. Anyone have any ideas for an AG 10 gal batch? I'm open to brew any style. Here's what I have in stock. Malts: Rahr Standard 2 Row - 45# Munich Type 1 - 40# German Dark Munich - 4.5# Breiss Victory -...

Need feedback: Cinnamon Vanilla Oatmeal Stout

I've never brewed an oatmeal stout, but I thought that cinnamon and vanilla would go good in one. I looked at a few different and kind of just through together what I liked from each. Tell me what you think! 10 GAL All Grain Est OG: 1.063 Est FG: 1.018 Est ABV 5.89% Est IBU: 33.9 Est SRM: 40...

    Where's the Hop forum???

I was reading through John Palme'rs "How to Brew" and I though his Hops list was very helpful. I thought I'd post it to the Hop forum only to discover that HBT doesn't have one. Here's JP's list. Bittering Hop Varieties Name: Brewer's Gold Grown: UK, US Profile: Poor aroma; Sharp...

    Widmer Brother's Spiced IPA Clone

I've been looking for a good clone for awhile, but everyone that I've found seems to just be taking a shot in the dark at the style. I've yet to find one that uses the ingredients that Widmer stated that they used, so I decided to try making my own using Beer Calculus at Hopville.com. Widmer...
