    What are your nostalgic foods?

Interesting! My father in-law made something similar from his childhood. I think he put cubed Velveeta cheese, bacon, and spices through a hand meat grinder, then spreads the mixture on bread slices, and under the broiler. I remember thinking it was pretty weird! But, it tasted pretty good.

    What are your nostalgic foods?

On special occasions and holidays when I was a kid my grandfather use to buy some pickled herring. We'd eat a jar of it with saltine crackers. I lost my grandfather last year, he lived well into his 90's, (probably from all the pickled fish) I still buy a jar sometimes on holidays and...

Travelling to the US, opinions on best beers to try!

If you're in Chicago, you might as well hop in a plane and take a short 2hr flight to the Northeast . It will be worth your time.

    Beer that makes you salivate?

I had just finished push mowing my giant lawn yesterday in the 80 degree sun (that's hot for here), and my brother in-law pulled in the driveway with an iced down cooler with some Labatt Blues, I immediately started salivating! haha.

Pumpkin - To Mash or to Boil

Wow, with that logic I don't know how I could possibly believe otherwise.....

Pumpkin - To Mash or to Boil

Haha, for the record, I'm not a huge fan either, I'll drink em', but I'd rather have something else. The wife really looks forward to the pumpkin beer in October, so I don't like to let her down. I've done the roast to boil method the last 5 years, and if that's the wrong way I don't want to...

Pumpkin - To Mash or to Boil

If you roast the pumpkin first, say 375F for 45min-1hr, then add it to the beginning of the boil and let it cook with the beer for another hour.... what could you possibly be benefiting from adding pumpkin to a 152F mash for an hour? Is there some kind of interaction with the grains in the mash...

Pumpkin - To Mash or to Boil

I brew a pumpkin ale every year for fall. I'm actually planning on brewing it next week. What I do is very similar to the method in the article you mentioned. I've used pie pumpkin, or butternut squash. I split in half, roast with maple syrup, scoop out the flesh, put in a muslin bag for the...

    Minimum height for hop support?

I remember researching trellis height when I planted mine several years ago and settled on 18ft....If you planted some by the fence they might crawl along horizontally, but you'd likely need some more height. Throw some in this year, they don't get very big the first year, and put some...

    Almazan Kitchen Videos...

Cool videos, I watched a couple of them...the giant steak one had my mouth watering. I like the lack of commentary and the sounds of the cooking. There's something about cooking meat over an open fire that makes you feel alive! I have a granite mortar and pestle, use it all the time for...

What did I cook this weekend.....

Yeah, I've seen it in its own 12pks too. I was more curious about the "River Ryed" IPA. I'm assuming it's a play off the popular David Duncan book, which is one of my favorites.

What did I cook this weekend.....

I use to drink the "Ruthless Rye" all the time, really liked it. I haven't seen it in a while....Is that a new one? I don't think I've seen it before. Oh, veggies are looking good too!

Fruit Beer Pit or not to Pit?

If they're frozen you should be good to go. I'd just mash/crack them a little and leave the pits in! There's a video on youtube where John Kimmich from the Alchemist here in Vermont talks about their Petit Mutant beer and the flavors that are extracted from the cherry pits over the 6 months...

    Bottle carbonating at altitude?

I believe the only affect you should see is at higher elevations the CO2 will come out of solution quicker than it would at sea level or lower elevations. If you calculate how much sugar to add for 3.0 volumes there will only be X amount of CO2. It's just the rate at which the gas is trying to...

    First blow out

I brewed a brown ale in April, it was getting late and I had a few beers in me, so I stuck an airlock on it with plans to put a blow-off tube on in the morning....didn't make it, sounded like a gunshot went off about 4am. Brown ale all over our newly painted white ceiling, walls, and beams...

    Red Saison

I remember a post a while back of someone doing a Raspberry Saison and it had a nice red color from the berries. I put it in my notes for a future brew. Just a thought!

Should I dry hop my brown?

I brew a brown ale that I dry hop, drinking one right now. I like the citrus hop aroma with the roasted chocolate flavors. I think it comes down to your personnel preference, give it a shot if you want, if you don't like it you learned something for next time! Cheers.
