    Water sample question

    I am sending a sample off to Ward labs. I currently use a carbon filter so I am wondering if I should send the sample of the filtered water or non-filtered water? I assume that I should send them a sample of whatever is going into my kettle?

    When is temp not as critical anymore?

    I only have room for one bucket in my ferm chamber and want to brew again, my oatmeal stout with S04 has hit FG so I assume its ok to take it out and let it chill in my closet. Temps range from 55-65 in there these days.

    I was looking at a recipe that called for a 30 minute hop stand and then using a hopback. If I did a 30 minute hop stand then wouldnt the wort temp be to cool for the hopback to be effective?

    Racking on oaked bourbon?

    I have a barleywine I'm about to keg and I also have some french medium toast oak cubes that have been simmering with some bourbon for a bit for use with another beer. I was thinking about pouring the residual bourbon from the container into the keg and racking on that. Thoughts?

    Dry hopping question

    I thought I would have a keg available for my IPA but it looks like I might not have one available for a bit. Hops have already been in for 7 days, should I rack into another carboy to get it off the hops? Or is it ok to dry hop another couple weeks? Its 1oz Cascade and 1/2oz simcoe.

    If I have a beer thats ready to keg but no room in the keezer can I just throw it in the keg like normal, hit it with 12psi and let it chill till I can put it in the keezer?
