    Lowering IBUs

Can I lower IBUs in a extract kit by boiling the bittering hops say 45 mins instead of 60 ? The kit is a 6.5 abv with 75-80 IBUs. 2 oz. Columbus is the bittering hops. Would it affect the balance of the beer by lowering the IBUs to around 50 - 60 IBUs?

    Sanitizing bottles ?

Does anyone not rinse their bottles in sanitizing solution before bottling beer? I rinse my bottles well with water after emptying them and after they dry store them in the covered carboard container. All ready to go on bottling day. No problems yet, You ?

    Still cider carbonation failure

I thought a 1/2 cup of sugar added to 5 gals still cider before bottling would give me a little carbonation but after 2 1/2 weeks at room temp then chilled still no bubbles. Is there anything i can do at this point to carb the bottled cider w/o too much hassle or just forget about it ? Better...

    Wood fire for boiling

Anyone ever try doing a boil over a open wood fire ? Seems like it would be the original way to do it. Maybe some smoke and ash in it would add some character ? Edit: Ok so this has been already discussed here, not surprising. Found it by google...

    Fermenter pail lids with gaskets

It is nice to know what is going on in the fermenter pail and the airlock is the best indicator. I've been struggling with the basic no gasket lids you buy from the online homebrew supply stores for awhile now. Trying to get them to seal has been a royal PIA. The solution is at true value...

    1st Applejack

Put 1 1/2 gals of hard cider in a 2 gal plastic fermenter with lid and stuck it in the chest freezer overnight at 10 below zero. Did some ice skimming every hour as it started to freeze until there was just under a gal left and went to bed. This morning almost solid block of ice except about...

IBUs , how much is too much ?

Just curious as to what people's thresholds are to bitter beers. Tried some commercial craft beers (Dogfishhead 60, SN torpedo, Sebago and Long Trail sick day IPAs )that were up there in IBUs say in the 60-80 IBU range and figure thats about all the bitterness I can tolerate. My latest...

Shipyard export ale tastes smells like wet dog

Pretty disappointed after shelling out $9.50 for a 6 pack. It was OK last time i bought it, never again shipyard. Fact is a lot of commercial beers are substandard since i started brewing my own 6 mos. ago. My brews seem to be way more palatable than many on the shelf at the market. Anyone...

Why is carbonating cider different than beer ?

Little confused on why you need to pasteurize cider if adding any fermentable sweetener but not beer. We know to use a certain amount of sugar to carb beer without creating bombs why not cider ? Why is it different? Thanks, have my 1st 5 gallons cider in primary .

How much CO2 can a sam adams bottle handle ?

I hope i didn't screw up but i just bottle a hefe batch with 3.5 volumes of CO2 or 7 ounces corn sugar for 5 gals. 1/2 the batch is in fairly heavy 22 0z bottles and the other 1/2 is in 12 oz sam adams bottle. I see now where that much co2 may be pushing it a bit for some bottles. Anyone have...

Primary to bottling bucket via spigot

Anyone do this instead of auto-siphoning with good results. I placed my spigots up about 1 1/2 " from the bottom of the bucket and am wondering if any sediment/yeast would get sucked up draining to the bottling bucket from spigot through tubing to bottling bucket . Haven't opened the spigot at...

Extract kits and corn sugar quantities

How come they can't bother to send the proper amount of priming sugar for the beer type ? With Midwest supplies it is always 5 ounces no matter what type of beer, too much for ales and not enough for bavarian hefeweizen. They seem to be able to get the grain and malt quantities right usually...
