Fermentation just started really going on mine 6/23 (pitched on 6/20). Only made a 1gal batch as I'm still learning my Mead making skills, but its going strong. I used dark cherries for mine.

    New from Chicago

yeah its easy to start brewing here in Chicago, its so easily accessible there's no reason not to dapple in brewing, or go all out for that fact. I have even found a group in my home area (although I haven't gotten in contact yet) that has brew meetings and swaps so look in your area for the same.

    Re-bottling Mead

Is it better to co2 fill the bottle first then transfer? I ask because I was wondering about this as my capsicumel seems to be a bit much to have in 22oz bottles and I want to split it into smaller bottles when needed and re-store it

    Joe's Ancient Orange Mead

just bottled this one up last night along with my capsicumel. This cleared up nicely and tastes pretty decent for as young as it is. I did the recipe to the T and worked like a champ. This was my second 1gal sized mead. My wife is really looking forward to this one.

    Habanero Capsicumel

i just bottled up my 3rd batch of 1 gallon size mead, a Mango Habanero mix with orange blossom honey, 2x habanero + 3x mango primary and 3x habanero + 3x mango secondary. A quick taste after the primary wasn't hot enough so I added more in the secondary. The high ABV is masked by the liquid...
