Brett Dregs - Starter. What did I do wrong?

I used an airlock when I stepped up bottle dregs and didn't have any issues. And like others have said, my first starters volume was smaller and I believe lower gravity as well

    Brett Beer Saison Brett

Thank you OP for a wonderful recipe, I entered my sour variation of this (using jp weizen bam bottle dregs) into the wisconsin state fair amateur homebrew competition under category 28b and got a first place ribbon and scored 37.5. Though, I was the only entry in category 28.

Raising temperature at the end of fermentation?

I'd bet that its done fermenting, I've fermented that cool before without issue. I would move it to a warmer room and dry hop though

Moving next week and this thing isn't coming along, I bought it off craigslist about 3 years ago from someone who had been using it as a garage fridge. I gutted it and then drilled a hole in the side for a gas line and two holes in front for taps. Works great, I've been using it for several...

Hydrometer: the best of the best

This sounds like an exaggeration, my wine thief allows little clearance for the hydrometer inside it and my readings dont seem off at all. I spin the hydrometer and let it settle down a couple times and it consistently goes to the same number

Creating a Saison /w Brett using bottle dregs

Yeah they have been fermenting for three weeks tomorrow, at 80-85F, will be taking them out of the chamber to let them age at room temp for several months. I dont plan on doing any type of secondary.

    Brett Beer Saison Brett

I made this two weeks ago and split the batch into two, with stepped up bruery saison de lente in one and jp weizen bam in the other Gravity came in high at 1.071, I extended the boil because I thought my mash efficiency was way low but beersmith was counting the candi sugar in the mash also so...

    damn it. infection??

I had something that looked similar before, it looks like a film might be developing on yours. if thats the case, itll become much more obvious in time and also smell like sour/green apples (at least mine did). the film will become much more apparent and offcolor. this is what mine ended up...
