I've never used whole hops before, but when a neighbor with a ton of cascade plants offered me some I jumped. I've never used whole hops before, so I did a very quick search and learned that hops should be stored in the freezer.
So I threw them in a ziploc bag and put them in the freezer...
Your right, I said flame out but the recipe says whirlpool. And there is some bitterness from the time it takes to cool down. But if they are just extracting the bitterness at WP, why not add less hops earlier?
I'm just wondering if this has to do with beta acids, etc... Which I don't...
I recently tried to clone Surley's Darkness (a Russian Imperial Stout). It calls for aroma hops at flameout, as well as months of aging in the fermenter and bottle. Since the aromas from hops decrease over time, what is the point of using aroma hops in a beer that will be aged?

I just brewed over the weekend. I brew BIAB in a keggle, and had a horrible time mixing the grain in my mash. I have a little plastic mixing wand, and it was just not sufficient with this much grain. So my mash temp was all over the place...
I realize that it's been a few years, but how did the three different batches go? Did you like the pure clone better, or one of the 1 gallon offshoots?
I'm going to be brewing something similar next weekend. What temperature did you mash at?
