    First Hefeweizen worst rack ever

    My racking cane failed so I had to improvise. I think I got a lot of air in the wort. Had to manually pump into carboy. Will I be ok? Lots of foam, lots. Following a perfect fermentation with external temp solid 57°F. I'm bummed. It was for Octoberfest.

    First Sour (right thread?)

    I brewed my first Sour 9 months ago. After one week on the cake I racked rack a carboy, wrapped it in a blanket and stashed it. Today I infused it with apricot. How long should I wait to bottle it? I only bottle carbonatr at this point. Thank you in advance for experience based advice.

    Primary forgotten

    I brewed an IPA and forgot I stored it in my basement in the primary bucket. Airlock is in tact and it's been sitting in my San Francisco basement over a year I'm afraid. Temp between 48 and 68 f depending upon time of year. Should I bottle it or toss it?

    Fermentation

    I brewed 2 batches yesyerday. It was 91 degrees and I had a hard time getting the wort below 80f. Finally I pitched and carried the product down in the basement. Within 1 hour the air locks were buzzing. 24 hours later, no bubbles. What should I do?

    White mold?

    I left my wort in the primary for approx. 90 days. When I went to bottle there was a white, skinlike layer on top of the wort. I bottled it anyway. Can anyone tell me what the white milky skinlike substance is?

    California Bottle crates needed

    I am looking for plastic or wood crates with individual dividers to store my beer. Still new at brewing about a year and still put together October fest bottles for 100 drinkers at our yearly party. Cases of 24 would be great but hey 12 10 does not matter.     I am making an imperial I PA with some added coconut crystals. It seems to be very cloudy. Also it calls for a secondary fermentation plus add 4 more ounces of various hops at the second fermentation. Can I just wait 4 weeks and add hops to the primary or is secondary a must? BTW SG 1.095...

    I have been saving bottles to use for my homebrew and today when bottling discovered my capper doesn't work on green Stella bottles. Is there a special bottle capper for these bottles as I have a butt load of them and I already peeled the labels etc.? Thanks:mad:
