I use Star San in mine since I have it handy when I am putting the airlock/lid on but vodka is perfectly fine too. You can fill it up with vodka/sanitizer when you take the lid off next or just coat some foil in sanitizer to put over the hole while you change out the airlock water at any time.
I brewed a wheat beer yesterday and added half of the LME at the beginning of the boil and the rest with only 15 minutes left to try and help in keeping the color lighter. The color was nice so I think it definitely helped adding that second half in late in the boil.
Well I racked my stout to secondary today so I could add the chocolate nibs and it tastes fine. The SG was at 1.022 and the FG is supposed to be 1.010-1.015 so I think I am fine. Turns out I didn't add as much water as I thought, the krausen made it look higher up in my bucket I guess...

Well then I'd say if it's super fizzy and tastes good then good job. Better to have fizz than flat IMHO. I wouldn't worry about it but maybe you over did the sugar while bottling? I've had homebrew batches come out a bit more carbonated than others but never overly "fizzy."
