    Not sure if fermenting!?

I use Star San in mine since I have it handy when I am putting the airlock/lid on but vodka is perfectly fine too. You can fill it up with vodka/sanitizer when you take the lid off next or just coat some foil in sanitizer to put over the hole while you change out the airlock water at any time.

    Not sure if fermenting!?

Also worth mentioning that you should use vodka or a sanitizer solution in your airlock in case any gets sucked back in.

Switch to Keg or All Grain?

I went kegging before all grain simply because I already had a kegerator and cost isn't an issue with my many hobbies. first world problems

Primary for 4 weeks, SG is 1.000 (!) - but still bubbling in blowoff!?

Psssst... The OP started this thread in 2013 and the post above yours was bumping it from back then. ;)

    Beginner yeast question

Quit farting around with it and let it be for another couple/few weeks and then test the gravity.

Question about using my propane turkey fryer.

I don't kill my flame while adding LME or DME, I just continuously stir while I am adding them And keep the boil low.

Hefeweizen LME beer is VERY dark

I brewed a wheat beer yesterday and added half of the LME at the beginning of the boil and the rest with only 15 minutes left to try and help in keeping the color lighter. The color was nice so I think it definitely helped adding that second half in late in the boil.

    So who's brewing this weekend?

Racked a chocolate milk stout to secondary today and brewing a watermelon wheat tomorrow.

Too much water but high OG?

Well I racked my stout to secondary today so I could add the chocolate nibs and it tastes fine. The SG was at 1.022 and the FG is supposed to be 1.010-1.015 so I think I am fine. Turns out I didn't add as much water as I thought, the krausen made it look higher up in my bucket I guess...

    1st bottling today and....

Bottling day is like your wedding day... It's a bunch of work, you get drunk and you are glad when it's over. I guess looking at all of your finished bottles would be the honeymoon.

Too much water but high OG?

Bless your patience, I lack that! Next brew day I will only drink session beers during the first couple of hours. ;)

Too much water but high OG?

This seems logical, thanks! Regardless I'm just letting this batch hang out until I rack it to secondary and see how it goes.

When to switch to secondary fermentation

I have a chocolate milk stout in primary right now that I will be racking to secondary only because I am adding the chocolate nibs at that time. So as others have mentioned, racking to secondary is usually only warranted for certain reasons. My next brew, a watermelon wheat, will not see the...

    Real Fizzy?

Well then I'd say if it's super fizzy and tastes good then good job. Better to have fizz than flat IMHO. I wouldn't worry about it but maybe you over did the sugar while bottling? I've had homebrew batches come out a bit more carbonated than others but never overly "fizzy."
