Panela 95 litros qual Resistência?

Bom dia pessoal,

Vou comprar uma panela de 95 litros para ferver no máximo 80L de mosto, andei pesquisando e alguns falam que o ideal seria uma resistencia de 6.000W outros de 8.000W, o que me recomendam?

PS: Usarei um SSR com Potenciômetro para poder ferver lotes menores.
