Recipe Ideas - Feedback (Nut Brown, Irish Red Ale and Milk Stout)

Whenever i create a new recipe, I always reference the book Brewing Classic Styles. It's a starting point from which I can expand, or keep it the same. All the recipes in that book are simple and excellent.

    Making my first beer recipe.

I always add carapils. It adds some color, but mostly it enhances mouthfeel 1/2 to 3/4 pf a pound is all you need.

    Which yeast?

Lots of advice on yeast, but I didn't see the obvious. Be sure to use plenty of healthy yeast, no matter what strain. All too often, I judge beers in competition that do not utilize the plenty of healthy yeast approach. For me, the easiest way to achieve this is to make friends with a local...

    0/4 brewing

I read through all of this and never saw a mention of the quality of crush on the grain. Was the grain milled for you, or did you mill it yourself? I've found that precrushed grain from large home brew spots tend to be under milled. I bought my own mill after getting a batch of grain where one...

Phenolic / Plastic Taste in homebrews

You could be suffering from a combination of issues. First, it sounds like an infection. You also mention a slick mouthfeel, which indicates diacytel. There is a precursor(pediococus) for diacetyl in the wort as well that can manifest as an infection and the slick mouthfeel. With all the...

    When to make the jump?

Batch sparge is easier, however fly sparge is not that difficult if you are creative. This is how I fly sparge: https://youtu.be/CUbmCBN5mE0 I since upgraded the foil to a aluminum roasting pan with holes in it to prevent channeling.

What hop bags do you use?

I use mesh vegetable steaming bags from Super H Mart, a Korean grocery store. They are disposable and do a great job with keeping most of the pellet particulate in the bag. I tried finding them online, but there is no English on the package. If you have a Super H Mart in your area, go get them...

    When to make the jump?

Do you wear pants? Then itis time for all grain. If you already have the 10 gallon kettle, all you need is a mashtun and a cooler will do that for you at a low price. Don't worry about yeast starters until you want to make higher gravity beers. I use hydrated dry yeast for most of my batches...

    Review: Brewjacket Immersion chiller.

I got one of the first units through the Kickstarter program. I'm on my 5th batch and so far, it has been as advertised. it is kind of noisy, so it stays in my laundry room. It is difficult to remove the carboy from the jacket, so I use a brew hauler strap and step on the jacket as I remove the...

Word of warning : Don't Leave Full CO2 Tanks in Hot Car!

It happened to me just a month ago. No way does the car get that hot for the valve to release. You see these tanks on the outside of trucks all the time. I'm certain, they get a lot hotter than that with out any problems. If that were really the situation, there would be a lot more stories like...

Cigar City maduro oatmeal brown clone attempt

The chocolate malt will make it roastier. If you want sweet, add some honey malt or a touch of lactose. Be careful of adding too much chocolate. It will give it a burnt toast flavor.

    Apple Flavour in the beer.

Depends on the style you are brewing, however the Saf Ale 005, sometimes referred to as the "Chico" strain is a good all purpose yeast. Never be fearful of trying a liquid strain as they can be better suited for particular styles. I really like the Wyeast 1968 for my English ales such as porter...

    Apple Flavour in the beer.

The green apple can go away. I judged at a competition a few weeks ago and several of the beers had the green apple flavor. One of them was a friend and he gave me some on Sunday to sample again. There was no green apple that I could detect. He told me the beer submitted to the competition was...
