    First time doing bottle carbonation

I'm doing a 1 gallon batch of cider (apple/cranberry... semi-high gravity) and bottling in two 2-liter plastic soda bottles. How much apple juice for priming? I figured about 1/2 cup for each bottle. Also, there will be too much "headspace" so should I add water or take a chance and use more...

    Yeast for high temps

Right now it's surprisingly cool here in California, but that won't last for long. Going to do my best to keep fermenter cool (evaporative/ice methods) and will only do ales. Which yeasts do well at higher temps? I'm using dry yeasts.

    Primary/secondary containers

Small 1 gallon batches. I have a glass jug and a plastic jug. Should I use plastic for primary, then glass for secondary? Does it even matter? Eventually will have several glass jugs so I can try different ingredients, but have to use what I have for now.

    Aerating wort

I have a simple idea to get more air into my wort (can't buy anything at the moment so use what I have) After the wort cools down enough to deal with, I am going to use three 1 gallon jugs, fill part way and shake them vigorously (one at a time, alternating) I'm doing 3 gallon batch, and using...

    "Dark Side" cider

I've been doing some re-learning about brewing beer, especially about using steeping grains. This gave me a crazy idea... adding some steeping grains "wort" to my cider. Besides adding interesting flavors and aromas, it might help the yeast and also add body to the cider. Have I totally lost my...

    Using flavor grains with extract

Just getting back into brewing beer after many years (finally have a keg) I have never done all-grain so sticking with extract for now. Any advice on using flavor grains? The way I did this before was to use a smaller pan, steep the grains, then pour through a strainer into brew kettle (also...

    Apple Berry Pie Cider

I was temporarily out of funds, but wanted to make a 1 gallon batch of apple cider. I had 1/2 gallon of apple juice and 1 can of frozen concentrate apple juice. Not enough... but I also had some frozen berries and brown sugar so I took a chance and this is what I did. I have no campden tabs, so...

keeping fermenter cool in warm weather

Temps are getting very warm here in California, so I have a crazy idea to keep my fermenter cool (1 gallon jug) Just like a "swamp cooler" (evaporative cooler) I'm going to wrap my fermenter in a towel and set in container of water. Maybe also use a fan for more evaporation. Anyone tried...

    air pressure for dispensing

I have a 2.5 gallon keg. Don't really need CO2 to dispense beer because it will all get used up quickly. Can I change CO2 adapter to simple air valve (like a bike tire)? I have an air compressor. I will be using priming sugar to carbonate keg. If I keep air pressure will the beer stay carbonated...

    cider from frozen concentrate

Hello, make cider years ago from frozen apple juice concentrate (all of my experience is with making beer so total rookie with cider) Made a 1 gallon batch recently and had issues getting it going. Mixed FAJC too weak and dry yeast (red star champagne) forgot to rehydrate and might have been...

mostly make beer, but getting into cider

Hello, I get really onto making beer years ago, but gave up on bottling (too much hassle) so waited until I got a keg setup. Now I have a small keg so ready to start again! In the past, made about a dozen batches. A few went down the drain (learning curve) and one batch of brown ale the yeast...
