Thanks everyone for the bits of advice. I went ahead and got beersmith and working my way through the learning curve. Seems easiest way to do this will be to use less grains. Which means a little more money for me!

Quick dirty, with my set up I get effiency in the 80's. While this seemed awesome at first manyofmy beers are coming in at very high ABVs. Other than adding water after the boil is there a way to bring down effiency closer to what seems the standard of 75%?

Where I go they do all the measuring and milling. I give them my list, pour a drink off their kegerator, and chat while the get my stuff together. Great guys.

I requested a refund from PayPal but since I sent money as a gift (so he wouldn't get a charge against him) they won't refund. So I'm out $60.

Jay, Stay away! Sent the guy $60 for the chiller and never received it. Won't reply to email or PM. $60 down the drain. Lesson learned, first and last time I try to buy from here.

If I were doing it again i would have bought the biggest kettle i could first. instead i bought multiple kettles as i progressed from extract to all grain 5 gallon now to all grain 10 gallon.

Made a 5.5 gallon batch of this today with Wyeast 3944 and Tettnang hops. Couldn't get williamette so went with that.

I'm a watcher when it comes to transferring, not to bottling bucket but to keg. I start it off and just lower the siphon as the beer level goes down.

This is big for me as well. That first time someone says, "Hey I brought some BMC but do you mind if I have another off the keg?" Honestly the first it happened I felt like my kid had just scored the winning run in baseball or gotten a perfect score at a music recital. Super stoked! :ban:

I sampled this today and even though it is still under carbed it was really good. I went with 1.5 oz of simcoe and cascade as that is what I had and pitched in the zest and vodka (2 oz of zest, about 4 oz of vodka). It has a beautiful color and the grapefruit aroma hits you right in the nose...
