Red X Base Malt for Oktoberfest

I'm just curious what your thoughts on this might be, folks. I'm thinking a Marzen with bavarian lager yeast, 65-70% Red X, Vienna, some caramunich and maybe a bit o' special roast to round 'er out. Noble hops, of course. Opinions?

Dry hopping: hops disintegrated in keg

Hello all, I'm looking for some advice to fix my beer. I dry hopped in a keg for the first time about a week ago, and apparently the mesh bag I used wasn't fine enough for pellet hops, as I now have hop particulate in every pour. My first four pints were practically sludge, and even after...

Palmer's Nomograph VS. EZ Water: Which to use?

Hi all, So, I'm brewing a Winter Warmer tomorrow and I'm chiefly concerned with getting my mash PH in the optimal range, as I normally brew lighter colored beers and simply use a little acid malt with my flavoring/profile additions. Using EZWater XLS spreadsheet and inputting my grain bill...

Generally Confused about Reusing Yeast and The World

Hi all, So I'm trying to use yeast that I washed way back on Dec. 12 of 2013. According to Mr. Malty, my yeast is only 10% viable. I have only 14 ML of yeast in the pint jar. SO here's my question: how big should my starter be for 1 gallon of 1.077 wort? Process: intermittent...

Entertaining the idea of a few things in a winter warmer recipe, and I am interested in hearing your thoughts! Here's the list: 8-10 % Muscovado Brown Sugar (partially refined, more molasses-like that traditional brown) 8-10% Flaked oats (mouthfeel) Specialty Malts: Special B, Crystal 40...

    Bottling Emergency Please help

I am currently bottling a saison and overestimated the volume of beer I would get. I prepared enough priming sugar for 2.9 volumes @ 5 gallons of beer and wound up with 4 gallons, so my carb level would be around 3.4 volumes. WILL I GET BOTTLE BOMBS? I have a keg handy and the beer is still...

    Saison with abbey ale yeast?

Hello all, I just brewed a saison inspired by tank 7. I loosely followed the clone recipe in the database. I used 10.5lbs Belgian pale, 2 lbs flaked corn, a couple pounds wheat malt, a half pound white wheat, and a half pound Vienna. I decided to go with wlp530 on a whim, mainly because I read...

    Gravity too high - Altbier

I brewed an Altbier with my own recipe derived from a couple different sources. Price: Used Barley Crusher

What's a good price for a used 15 lb. Barley Crusher? I found on on C-List, but he's asking 140 and I know that you can buy them new for that amount. He's just had it serviced and had the rollers replaced. I'm going to make him an offer, but I don't want to insult the man.

Brew day today! Help with water!

I'm brewing an AG hefeweizen today, but I don't have a water report to help determine brewing salt additions. We have well water where I live. Should I just run out and grab some R/O water and use that? I brewed an IPA without any additions and it turned out astringent-tasting. Thanks!

    Imperial Summer Ale

My brew-partner wants to brew an imperial summer ale. I know that higher ABV isn't really fitting for the styles of beer you'd associate with a "summer ale" (i.e. kolsch and wheat beers). All I could find online was this...

    Film on top of sample

I took a sample of my dogfish 60 clone yesterday when I was racking to the secondary. I tried it yesterday, it tasted good. It's been in the primary for ten days. I left the sample in the fridge overnight and today there is a brown film on top. Am I contaminated/infected?

    VERY active fermentation

Hey all, I just brewed my third batch ever a few days ago. I woke up this morning to find the bubbler cap had blown off and the krausen had foamed over. Is this going to hurt my beer? I cleaned up the mess with star San and replaced with the bubbler with a sanitized one. The recipe...

    Painting chest freezer black (keezer)

Just thought I'd post a few before/after photos of my chest freezer that I painted today using rustoleum appliance epoxy. I just like the look of the black freezers better. The paint was only $3.97 at HD! It took two cans to paint my 7 cu. foot freezer. If any of you are interested in seeing...
