    Arcadia Hop Rocket Yeast?

What yeast is that at the bottom? Does anyone know for sure? Was thinking about plating it out and culturing it if it's interesting.

    DMS consistently on score sheets

I guess I have a DMS problem. Seems like whenever the recipe has a significant portion of Pilsner malt, the judges always report cooked corn and DMS. I boil off 2 L/hr. It's all I can do with my stove. Boil for an hour, put in the 25' chiller coils, fit the lid on loosely, and it takes about...

Max amount of Carafa I in a batch?

What's the maximum amount of Carafa I you have used in a batch, and how did it turn out? I want to brew a really roasty Citra black IPA and put 10% Carafa I, but the max I see people using is 5%. Is 10% too XTREEEM?

    Pressure keeps rising: regulator issue?

In my previous kegged batch, I turned it up to 15 PSI, waited until the pressure was stable at 15 PSI, then put it in the fridge. The next day, I checked on it and it was at 50 PSI! I vented the excess and turned the bottle's valve off throughout serving until I needed to bump up the pressure...

Infusion mashing: too much volume for sparge/mashouts

The basic problem is that I frequently run into the situation when doing infusion mashes that I just run out of "spare" volume if I want to hit my pre-boil volume accurately. For example, suppose I want to collect 12 L for a 10 L half batch (my stove boils off 2 L/hr)... Batch size: 10 L Boil...

    BJCP bottle fill level

What's the accepted bottle fill level for BJCP? More than once, I got comments regarding bottle fill, but they didn't specifically say what the level should be. I usually fill so that the final level is between 1/4 and 1/2 way up the neck.

    Adenine Mutants

I was re-slanting a slant of Chico yeast today that appeared a little pink instead of white/gray. My wife who is a Ph.D. that spent some time in a yeast lab said it looked like an adenine mutation...the yeast cannot manufacture adenine, and turn pink when they consume the available adenine in...

How to refinish a spot on wood floor?

My computer chair has slowly worn a ring of now bare wood. Can I repair this thing without having to strip the clear coat off a large area of the floor? Any tips appreciated. I don't know how this has anything to do with beer, except I sometimes drink beer in the offending chair :)

What does PCB arcing look like?

Guys, I picked up a centrifuge that had been discarded since it was blowing fuses. I have spent the last few days reverse engineering the schematic, but as I look at the under side of the PCB, I can see white marks on the surface connecting some of the solder points and traces. Is this...

When does peat-smoked malt get bacony?

The recommended dosage for peat-smoked malt is 2-10%. At what point in this range does it go from being smoky to bacony? Thanks!

    Way Overcarbed: Fix?

So, I had a Kolsch that I bottled a few weeks ago. I had dropped the temps down to 45 degrees after a couple of weeks to sort of simulate lagering. I think it must not have been completely done fermenting, because those bottles are WAY overcarbed. When pouring, the glass is like 90% foam...

Because I was under 21 until 2007, store won't sell to me

Went to the grocery store to buy beer today. Suddenly, the lady notices it says "under 21 until 2007" in the corner and tells me they don't accept licenses that have the phrase "under 21..." on them. She said it is a corporate policy because they have had 3 alcohol violations at that location...

Help me identify an unmarked electrical component.

I have a malfunctioning centrifuge: it keeps blowing the fuse. Being an EE, I decided I'd take it apart and fix it. Immediately after the fuse, there's a mysterious unmarked electrical device: The 3 leads nearest the camera are for the neutral wire coming in, the hot wire from the fuse...

How to deal with 8oz of leaf hops in boil?

So, got a 4 gallon batch coming up with 8 oz of leaf hops in it. I've never even used leaf hops myself, so I am worried that maybe it'll turn into one huge mess. I've got two muslin bags, but I was wondering if anyone could give me some advice or tips when it comes to large quantities of...

    Simple PWM Stirplate Controller

I did a search on the forums, but I can't find a post about a simple PWM controller for stir-plates. I have tested it, and it works great. Any way, here it is: Schematic & Build Diagram In Action R1 = 22k resistor R2 = 100k pot (use the middle and one of the end pins) R3 = 4.7-10k...
