    Help with picking cigars...

If you're learning what profiles you like you can rarely go wrong with Fuente Chateaus or 858s (these are sizes). I would get a Cameroon, maduro, and sungrown wrapper and see what you like about each. I love a nice cameroon with a hefe. This will give you a good baseline to go off of. Once...

Cigars and Homebrew - Getting the Most out of Both

Great article! I love pairing a PDS4 with a mildly hoppy IPA. I've found that I lose some of the complexity of some higher end cigars if the beer compliments the taste too much. It's a wonderful to have the two flavors build on each other, you just lose some of the subtle notes of the cigar...

Is my off flavor due to water quality?

That's a good point. I fill the hlt full blast. I didn't realize I needed to fill it slowly for the filter to work. I'll try the campden tabs and see what happens. I may do that before I do anything else so I don't change too many variables at once.

Is my off flavor due to water quality?

Thanks. It seems like the off flavor comes through in all styles of beer. I'll try a 50/50 dilution next time and see what happens.

Is my off flavor due to water quality?

That's the way the water district reported it to me

Is my off flavor due to water quality?

It seems like I've always had a weird off flavor in my beer. Sometimes it's very noticeable, sometimes not so much. It always comes out strongest in the burp. I've been doing some reading on here of others with similar problems and many blamed the water. I'm attaching my profile. I run it...

What do you do while mashing in??

I usually brew Saturday mornings so I fill the time with a breakfast cigar and old episodes of "The Rifleman"...maybe a breakfast beer too :)

Any Homebrew Clubs in Central Illinois?

Still active. We are filling a 55 gallon barrel this weekend with various stouts that individual members made. We normally meet at McGorray's at 7:00 on the second Tuesday of the month.

Dry Hopping a Blonde Ale with Nelson Sauvin?

I never really did come back and update this but the beer was a big hit. Turned out to be everyone's favorite and I burned through the keg before I had a chance to enjoy it. I'm definitely doing another batch.

Any Homebrew Clubs in Central Illinois?

Welcome! I brew about twice a month now, and maybe more as I'm stocking up for the summer. It would be nice to have a small get together for a brew day. If either of you are interested shoot me a PM. There's a group that meets in Decatur once a month that isn't too bad. Usually about 8-12...

    Stuck High Gravity Stout

To be honest I was shooting for the sweeter side. I even backed down on the IBUs. It was going to be my "win people over to stout", stout. It tasted great when I sampled it. Im thinking some bourbon soaked chips might just round it out perfectly. I am noticing this afternoon that there are...

    Stuck High Gravity Stout

I used 2 packs and aerated with on O2 tank before pitching https://www.homebrewtalk.com/f68/founders-breakfast-stout-clone-139078/ I added in a pound of lactose I did use a blow off, but the airlock had a cross pattern in the bottom that got clogged. I used one that was open and that...

    Stuck High Gravity Stout

I tried my first high gravity stout brewing the Founders Breakfast Stout clone. I added a pound of lactose to it and pitched S-04. My OG was 1.098. If fermented like a bastard the first week and blew the top off the bucket twice. After about two and a half weeks and no activity in the airlock...

    Trying a Nelson Sauvin IPA

Pretty new to brewing, and I would like to try a Nelson IPA. I've heard a lot of good things about the hops. I'm planning on pairing it with some simcoe to balance it, and keep most of the additions late. What do you think? 11 lbs pale malt 1 lb crystal 40 .5 oz simcoe first wort .5...

Dry Hopping a Blonde Ale with Nelson Sauvin?

Thanks. I'm not really worried about what's in style or competitions. I just heard a lot of good things about these hops and this seemed like a great place to try them out. I just didn't want to ruin beer because I don't know what I'm doing. I think I'll take both of your advice and go...

Dry Hopping a Blonde Ale with Nelson Sauvin?

I a tried Nelson black IPA at a brew club meeting that totally blew me away. Since then I've ordered a decent stock of nelson sauvin hops to start playing with. I plan to brew a single hop nelson pale ale to get an idea of what they contribute. While planning all of this I looked over at my...
