Adding fruit. How do you do it?

Would pectic enzyme reduce this? Also does freezing kill bacteria and prevent infections?

What the hell did I do to deserve this head?

I've had the same thing happen to most of my brews, except it's always after the bottles have sat in the basement for several months. My Belgian dark strong ale is borderline useless after 5 months, as soon as I open a chilled bottle it starts foaming vigorously and all runs out into the sink...

Adding fruit. How do you do it?

I know freezing helps break the cell walls of the fruit, which greatly helps in flavoring a brew. Other than that I'm still learning myself! Do a quick search on here (and google), lots of great info out there on fruit additions. Let us know how it turns out!

    Reverse Dry Hopping

Dude, don't worry. Your beer is fine! the amount you lost due to separation transfer is negligent compared to the overall amount generated. Bottle/carb/keg your brew and don't worry. If monks 1000 years ago knew how to make good beer, what's to say you don't!!?

    The way over engineered thread

I've started designing a variety of mash paddles to be cut on this (well one just like it...): I have access to this machine at school (ETSU) and have been using CAD for several years in my studies here. It only makes sense to utilize this equipment my technology fees have been paying for ;)...

    What have I brewed?

Well she finished out at 1.029 FG, not quite what I had hoped but still 8.1 % ABV. Very dark, opaque color, very strong sweet vanilla scent and coffee flavor. I am thinking next big beer I try I will use an airstone and pump to oxygenate my wort, I just poured back and forth a few times right...
