    Just curious: why would you omit the honey malt? And why switch the Caramel? Also, I know the roasted barley is almost necessary to call a stout a stout but I wanted a very smooth stout on the sweeter side. A dessert beer.

    One final question as I look forward to brewing this recipe: I have never done a step mash before and I assume I will have to use a protein rest because of the flaked oats. Is there anything I should be aware of ahead of time? Tips and tricks?

    Pellet. The AA is 11% for Target and 4.75% for the Goldings. Those are average numbers though, not necessarily precise.

    Yes I think so. I figure that Goldings are generally fairly mild in flavor and aroma and I really wanted a unique aroma. I've never used Target hops but I heard they go quite well in small quantities with Goldings. I figure why not swing for the fences? :)
