    HAHAHAHA!! :mug: I never check gravity before I decide fermentation is done. I wait 14 days and then I bottle. I do check it once its in the bottling bucket but never to decide whether its done or not.

    I usually do 14 days fermenting and then 3 weeks on bottle. I would add, put the bottles in the fridge for 3 days before opening them. This lets more of the CO2 soak in.

    I would say some of them are as old as 9 months. Each type are in individual sandwich bags and all of those are in a ziplock freezer bag.

    Sounds delicious!! The sample I had before bottling had a really nice chocolate toasty flavor. I'm glad to hear it should be ok serving so early. I doubt it will last long enough to find out how it tastes after some aging lol. Maybe I will hide a couple of bottles. Thanks for the input. -Klink
