    Hard wire STC-1000 problem

    I never bypass the stock thermostat when installing an stc-1000. I install them inline with the main power cord coming from the wall and into the fridge. This way I only cut into the three wire power cord and leave the stock wiring in place.

    If it worked before then your wiring is correct. And there is a reason these things are cheap. Check your connections. If a stray strand of copper is creating a short you will get all sorts of problems. Like I said though, there is a reason these things are cheap.

    @somekindofnick No, you can't. The reading he took at the hypothetical 8 gallons shows that, when he boils down, the gravity would be low. Basically, there aren't enough GU in the water at 8 gallons to give you your target gravity when you do boil down.

    Arch tech, your friend is mistaken. I have cyser that has been in bottle for over a year. The flavor has changed a lot in that time, but it was all for the better. The flavors have mellowed and a far better flavor profile has emerged. Let it age.

    My hefe recipe is a single decoction mash. As yooper said, it's common in some varieties of ales. It adds a noticeable flavor difference.

    Seems like a good idea, so long as you don't snag the bag. Another thing to try is stirring while heating. I use paint strainers, and while stirring vigorously during heating, I have never had a melted bag.

    I'm going to say infection as well. You can over carb by quite a bit without blowing bottles. Those little nasties are far more gassy.
