    Biltong (South African) Dried Beef Recipe

    You can mix vinegar, brown sugar, salt and coriander as a base and leave it over night in the fridge. You can also just make sure the vinegar mixes with all the meat and spice and hang up straight away. A dehydrator will work.

    We usually hang the meat during our dry winter months or google diy biltong maker. Basically a box with a light and a fan in it. I like my biltong to be in thick pieces so I can grab a large piece and slice it with my pocket knife while watching sport.

    To boil or not to boil Coopers kits?

    I boiled a Coopers Ale can with 1oz Centennial Hops and 2lbs LDME. Its a lot bitterer than expected due to the boiling, but after four weeks in the bottle its a fantastic drink.

    Thanks for the input guys. I did stray a bit as I find kits like mixing juice in a sterile environment. Explains why my last IPA was pretty bitter. I will be doing some extract and partial grain in the next three weeks. Just waiting for ingredients and a bigger pot.

    Howzit, I'm Snowbeast From Kwa-Zulu Natal South Africa. I inherited a Coopers kit from a mate and will hopefully have my first brew started this weekend. I look forward to learning and most importantly drinking beer :D Cheers
