I know I've been guilty of this same exact thing. Life sometimes just gets in the way. I really never had a problem with any of my brews being in a plastic carboy for two months. I've often wondered the same thing, especially now that I am entering more and more beers into competitions. Best of...
Thanks for the opinions. I was thinking it might be too much. I seem to remember the guy at my LHBS say not to dry hop over two ounces. Maybe with too much hops I would not get enough of that coffee flavor.
I'm going to be brewing a Black IPA with some coffee. I want this to be a very hoppy beer. How much is too much when it comes to hops? Here's what I'm thinking:
60 min 1.25 oz Casdade Pellet
60 min 1.25 oz Citra Pellet
30 min 0.75 oz Cascade Pellet
30 min 1.0 oz Citra Pellet
05 min 1.0 oz...
Greetings all! I was sipping my morning coffee while driving into to work. As I was enjoying this incredible Ethiopian from Starbucks, my mind began to wonder to brewing beer. I was thinking about the fruity notes that filled my mouth from this wonderful cup of coffee and instantly thought of...
I'm using a London Porter Extract kit that I purchased from Austin Homebrew Supply. Here's the recipe:
1/2 lb Pale Ale Malt
8oz Crystal 60L Malt
8oz Chocolate Malt
5lb Dark Extract
1lb Dark DME
1oz Challenger at 60 min.
1oz Fuggle at 5 min.
British Ale White Labs Yeast
I also used 2 cans of...

I was thinking of using it in my secondary along with some pumpkin pie spies.
I was looking for anyone that may have posted on...

I would treat it like food and just play around with it. When testing your gravity, take some samples of it and try it. I would start off with a real small amount like you've indicated and just add more if needed. It will be an interesting beer to say the least. I'm thinking of trying the new...
I haven't tried the pumpkin porter. I only heard about it from a friend of a friend at a party once. I would like to do it soon and have it age a bit, but I'm unsure of the availability of fresh pumpkins. I'll have to start looking this weekend.
I've had this planned for several months now. I'll be brewing an Oktoberfest lager, an Irish Red Ale, and a Pumpkin Porter. Fall is certainly the best time of year.
I've taken similar risks and things have turned out great for me. My wife gets medication sent to the house and each time the meds come with frozen ice packets. I fill up my sink with freezing cold water, add store bought ice to the sink water, and then add a few of the ice packets. I then...
