To much time in the secondary?

I know I've been guilty of this same exact thing. Life sometimes just gets in the way. I really never had a problem with any of my brews being in a plastic carboy for two months. I've often wondered the same thing, especially now that I am entering more and more beers into competitions. Best of...

Thanks for all of the suggestions here. I'm really looking forward to brewing this beer.

Black IPA with Coffee Extract Kit

Thanks for the opinions. I was thinking it might be too much. I seem to remember the guy at my LHBS say not to dry hop over two ounces. Maybe with too much hops I would not get enough of that coffee flavor.

Black IPA with Coffee Extract Kit

I'm going to be brewing a Black IPA with some coffee. I want this to be a very hoppy beer. How much is too much when it comes to hops? Here's what I'm thinking: 60 min 1.25 oz Casdade Pellet 60 min 1.25 oz Citra Pellet 30 min 0.75 oz Cascade Pellet 30 min 1.0 oz Citra Pellet 05 min 1.0 oz...

A Hoppy Black IPA with coffee

Greetings all! I was sipping my morning coffee while driving into to work. As I was enjoying this incredible Ethiopian from Starbucks, my mind began to wonder to brewing beer. I was thinking about the fruity notes that filled my mouth from this wonderful cup of coffee and instantly thought of...

    An idea while brewing today

I had an idea while brewing a Pumpkin Porter today. Could pumpkin extract such as this: http://www.amazon.com/dp/B0069P159A/?tag=skimlinks_replacement-20 be used? I was thinking of using it in my secondary along with some pumpkin pie spies. I was looking for anyone that may have posted on...

    Black Juniper IPA

I would treat it like food and just play around with it. When testing your gravity, take some samples of it and try it. I would start off with a real small amount like you've indicated and just add more if needed. It will be an interesting beer to say the least. I'm thinking of trying the new...

    Black Juniper IPA

I read somewhere that Sam Adams is coming out with a Juniper IPA this winter. I can't wait.

    Good fall beer?

I haven't tried the pumpkin porter. I only heard about it from a friend of a friend at a party once. I would like to do it soon and have it age a bit, but I'm unsure of the availability of fresh pumpkins. I'll have to start looking this weekend.

    Good fall beer?

I've had this planned for several months now. I'll be brewing an Oktoberfest lager, an Irish Red Ale, and a Pumpkin Porter. Fall is certainly the best time of year.

    Cooling wort with ice?

I've taken similar risks and things have turned out great for me. My wife gets medication sent to the house and each time the meds come with frozen ice packets. I fill up my sink with freezing cold water, add store bought ice to the sink water, and then add a few of the ice packets. I then...

    Highly carbonated beer

I brewed an IPA a while ago and am now able to enjoy the fruits of my labor. The only problem is that this beer is so overly carbonated it is almost impossible to really enjoy. What could have happened and what can I do now to help the cause. This was a brew that was fermenting in my crawl space...

    Blonde Ale

I thought of adding a lot of hops to it too. I just bottled and started drinking an IPA last night. Looking for something different, but I can never turn down a good hoppy beer.

    Blonde Ale

Since you mentioned citrus, I wonder how lime zest would work with the coriander. I know I like it when cooking mexican food.
