    Glad it turned out. Was reading through the read and was going to suggest letting it sit at 68-70 for a couple more weeks. You will find sometimes that the beer you let sit longer will sometimes be your best brews. Thats why i will "forget" some bottles on purpose and drink them months later...

    First brew this Friday! EXCITED

    Not sure how much wort those kits produce, but i'd say go with a larger pot. Alot of times, depending on brew, a 60 min boil will boil off a gallon of wort. So for a 5 gallon batch your looking around 6 gallons pre-boil. I use a 9 gallon and at a rolling boil it gets pretty darn close to the brim.

    Be patient. Airlocks can be deceiving. Like Boydster said, air can escape more from the sides than through the lock. Not sure how much you opened the lid, i used to crack it open a bit to take a peak sometimes as well. If you do this, sanitize your hands. 99% of the time nothing bad will happen...

    The few things i learned in belgium...

    Awesome you got to pick up some info while you were visiting! I just drank a crap ton of beer when I visited. Tripel karmeliet is one of my favorite beers that I've ever tasted! I also tried alot of local beers, almost nano/micro style brews and they all tend to be just as great as the big names.
