I've just brewed a RIS with a OG of 1.105, pitched 2 pallets of rehydrated Nottingham yeast on it. I have a 1" blow off tube to put in the carboy, but I started wondering if I were to leave it loosely covered with foil for a day, while the yeast are reproducing, would that be beneficial? I shook it to aerate because I don't have an o2 stone. For a beer this size that's probably not adequate aeration and I don't want it stalling, I'm hoping for a FG close to 1.023. I know wine makers often leave the primary open but I couldn't find anything on beer.
