Ask the LHBS, whose grain do they sell and go to the website. If they sell Briess and that's the malt you'll be using, go to the Briess website. Certain sites offer recipes for the malt they produce, along with the best brewing process to use. Weyermann, Best, Crisp, etc., provide data on the grain they malt. Some give a description of the malt and beer styles that work with the malt. Weyermann has recipes and brewing processes. Knowing generic info about color, SG and diastatic strength is good. However, each malster has the exact data on the malt or grain they produce. Depending on the variety of barley a malster uses, data varies. Other data like malt pH, protein percentage, SNR number, can help a brewer that may want to get a little more into brewing.
