Calypso makes for a rather clean bittering hop. From my experience with it as a dry hop the pear aroma is present but very, very subtle. I have used it as a late hop addition in a Mild to add to the complexity of the aroma without a noticeable "hop" aroma.

So now that I wrote that, maybe something like a salted watermelon Serrano wheat with the sweetness balance coming from honey malt, and lactic added at kegging. I think a fruit addition would help balance the sour and salt flavors, and reinforce the sweet aspect by making the drinker expect...

Have not tried with 'pepper' yeast before but have with 'Rosemary' yeast the Rosemary came through in the next beer.

If I want a lot of coffee aroma and flavor then I dry bean between 1 lb to 1.5 lb (pending recipe). If I want just the aroma and make up the flavor in the grain bill then between 4 to 12 Oz (again pending recipe).
