    This is the second go at the Belgian Quad. Maybe just the progression of tonight's sampling (and my dulled senses, thereof), but it seems to be better than the previous tasting.

    What is the ABV on the TH Duvel? I don't think you'd ever find this variant in Belgium. Gotta be a U.S. focused product. Interesting to see how Duvel Moorgat has been expanding their line (barrel aged, tripel hop, etc) - and their ownership of Ommegang has to be an influence.

    Used to do so much more in astronomy. Back when I lived where I could see the sky! 30 years in a "city" dulls the awareness of the extra-terrestrial.

    When all the take out places seem like the same ol', same ol': A simple meal - Tagliarelle, with a red lentil, tomato sauce. Fresh basil, rosemary and cream. A simple salad, and (of course) a nice bottle of red.

    I'm envious of the clarity of your HB Pils! Do you filter/keg or bottle condition? I do 100% bottles, and don't come close to that kind of clarity.

    Waterprofile Golden Ale

    To accentuate the bitterness, look for the SO4:Cl ratio to be higher. A "true" Burton on Trent profile has a very high ratio (look at line 1 in the Bru'n Water table of profiles - it's 17.4:1!), and in the Bru'n Water profile for the Pale Ale that I mentioned earlier, it show a 5.5:1 ratio...
