    Aged hops for a lambic

I need a few ounces of well aged hops for a lambic. Type doesn't matter as long as they have no aroma and are past the cheesy state.

    Boulevard Wheat clone

Love this beer and with help from Stan Heironymus's book " Brewing with Wheat", I've come up with a recipe that is close to the original. Blind tasting couldn't tell the two apart. Prost. 5 gallon recipe 5lb pale two row - Briess 2lb wheat malt - Briess 1.5lb unmalted hard red wheat 2.5 oz...

    mashing temps

Ok, I'm really starting to understand how certain mash temps effect the finally beer perception. My question is: if you do a rest at a dryer mash temp like 149, and then ramp to 156+ as some recipes call for, aren't the sugars converted past what a higher mash temp will extract? Or...

I have 8 varieties of hop planted on two poles 8 feet apart. They all have their own wire to climb. Do I have to worry about cross pollination between the varieties? Some are bittering, most are aroma.

    You have to try this!!!

After conditioning my malt with a little water before crushing it for my last few beers, I couldn't be more pleased. The crush is supreme, husks are whole and provide a perfect filter bed and my efficiency is through the roof. I add between 1/2 table spoon to 1 tablespoon per pound of malt...

Anybody else scorch wort with a RIMS element?

In 5 batches with my 120 volt - 1500 watt element, I've scorched two batches of Hefe. I don't know why that is. Seems to work with all the other beers, but I do an acid rest at 110 then run it up to sacc rest temps. I'm going to quit using it to step my temps and just hold from now on. Any...

    Disadvantages to thin mashing

I've been running my mash thin to make things work better with my RIMS system. I haven't noticed any difference after 3 brews, but are there any disadvantages of going from 1-1.5 qt per pound to 2 qts per pound when mashing??

I usually brew 5 gallon volumes. I want to make some 2.5 gallon experimental batches. Can I just cut the 5 gallon recipe in half or do I need to subtract a different percentage?

    Bottling with Brett

I have a Trappist style beer that is in the secondary. It is within a 4 points of final gravity. I was thinking about bottling half of it regularly to bottle condition and adding Brettanomyces to the other half to bottle condition for a few months. Has any heard of using Brett at bottling??

    propane or propane and electric

Building my keggle rims system. Wondering if anyone uses an automated propane system by recirculating the mash through a coil in the hlt versus recirculating it through an electric body. Will a keggle with a coil in the hlt keep the temperature steady enough???
