    Nottingham yeast, no activity during hydration

    I opened the bucket to pitch another packet of yeast but there is a thick head of krausen already. Not a bubble from the airlock though and I made sure everything is sealed securely. It's unusual but I'll go have a beer and relax. :)

    Help me tweak this stout recipe please

    Make sure your thermometer is accurate. I've had some thin brews because my mash temp was lower than I realized. My digital is reading 5F warmer than it should.

    Mixing Rye and Wheat

    Ruined Fermenter?

    I let it sit for a week with oxyclean, the water I poured out smelled of blueberries and the bucket still does too. Decided to make apfelwein in it and see how that goes. Figured the worst that could happen is I would be out $20 in juice and yeast.
