    Are you sure you are turning the pot all the way up and not down? You should not need a pot at all if you have a 12v power supply and a 12v fan. I'd opt to measure the resistance you are actually using and work from there.

    Let it ride. It may or may not have any funk, but provided it has that good beer brewing smell and no rotting garbage smell it will be drinkable. The nice thing is no matter what strain of good yeast grows it will be in 'style' :)

    That has been my experience. I decided to make a starter, and based on the starter whether to ramp it up or not. I'd hate to waste 5 gal when I can only waste a liter.

    No, I use both. But neither one adds enough sweetness at 1-2lbs per 5 gal to notice.

    That is correct. Treat it just like your priming sugar in that you mix it with water, boil it for about 5 minutes, cool and add. So long as you are only using sacc. yeast it will not ferment. Keep in mind it does not add much in the way of sweetness mainly just thickens the mouthfeel.

    Looks fine to me. Even if you have an infection, no need to trash the ferm chamber unless you have lots of obvious scratches and gouges. I use the same primary for regular batches as I do for bug batches, you just need to clean them well.
