    Funky night....Crooked Stave L'Brett D'Or, Brewmasters Collaboration Bouket Farmhouse Ale, Prarie Brett C. Dregs are being added to split batch of saison.

    Will be brewing a RIS next to age until December.

    Grimm Psychokinesis dry hopped sour ale.

    Just brewed 12 gallons of saison. 6 gallons regular and dry hopping with 3 oz Galaxy. Split the other 6 gallons into 3 gallon better bottles to get some funky dregs.

    Uptown Pale Ale. Columbus, Chinook and Citra Pale Ale with WLP029. Turned out pretty nice.

    Suggestions for a light Color summer beer

    +1 to Kolsch. Just tapped 10 gallons and about to breward 10 more. Light and refreshing during the Florida summer heat and humidity.

    Brettanomyces Bruxellensis question

    I have had nice results using brett b fermenting with ale yeast in primary for about 6-7 days, then racking to keg. I add the brett in the keg and leave at room temp for 2-8 months, releasing pressure on keg once a week or so. I have a couple dedicated funky kegs. I always use a picnic tap...
