I am attempting to create a shiner bock clone. I unfortunately don’t have the equipment to lager so will be making the ale version. Do y’all think a German ale yeast would be good for this beer or stick with the American ale yeast that is recommended? Thanks guys!
 
Check out wlp029. I have used it successfully in Kolsch beers and it is really clean and easy to deal with. You may want to keep it on the low end of the temps, about 65-66.
 
Fermented in the upper 50's, Nottingham has been described as being lager-like.

There is a thread on here about brewing with lager yeast at ale temps.
