My garage fridge died 2.5 weeks ago and I left a pack of PurePitch WLP300 Hefeweizen yeast in there (hiding on the top rack in the back). I just found it and was planning on using it this weekend.
Temps have been all over the place lately here in KY, down to 50 at night and occasionally up to 80 F during the day. I know a good portion of this yeast is dead, but what about mutation?
If I made a nice starter and added 1/2 pack of US-05 to it, would it be ok to use??
