Hey all,
I made a old strong ale back on 2-25 and it never hit FG est so I let it sit in the fermenter.
on 4-5 I noticed bubbling again in the bucket. I have this in a 14 gallon conical and I don't think there was anyway an infection could have gotten in.
grist is:
31.5 lb Maris otter
1 lb British crystal
1 lb extra special
4 oz black
og was 1.084 and last I checked it was 1.026 but supposed to be 1.021

I am going to take a sample tomorrow to see what the gravity is
anyone had something like this before?
its been sitting at 71 deg btw raised to that temp on 3-13 started at 67

Also last I had checked it was 3-7 and again on 3-13 and it was stable at 1.026

Racked to keg the other day and not sure if it had gotten an infection which started the ferment back up.
was sitting at 72 deg for 30 days and I can detect a bit of banana/clove flavor which I would assume is from the yeast.

here is a pic from 1 week before transfer.
it was in fermenter for about 50 days

Pro-homebrew-tip: Don't take pics of your finished beer as it's exposed to open air. Keep it closed, transfer without oxygen.
