8 oz Melanoidin
8 oz Carapils
8 oz Caramel 60
1 lb 4 oz Light Munich

So, looking for a good recipe using what I have plus ???

just make your own recipe using Munich and any of the top 3.

With another 6 or 7 lbs. of 2-row--or better yet, Maris--you could make a neat Irish Red with some of that melanoidin and Caramel 60.

I do a clear the grain,hop,yeast beer about every 3-6 months......

Experiment a bit....you will be surprised. Just make sure your specialty is not super high....ie less than 30% specialty and the rest a base like 2 row.
