I have a cider that’s been sitting for 8 months. It’s not fresh pressed apples, just typical off the shelf juice.
Question - I trypically back sweeten with AJC because I normally rack after about 6 weeks. Should I expect any difference with the long ferment time of 8-9 months? Should I still back sweeten? Any other options you’d recommend?
