Installing temperature probes

That's called a thermowell, you don't really need one as long as you can find suitable silicone gasket and stainless steel washer for that small diameter thread.
Type K thermocouples aren't really precise, you would be better with a PT100 probe that has three wires. The K type is used more in high temperature situations were a few degrees off aren't a problem. Also, you can find pt100 with 1/2 thread for better mounting.

Question remains though. I really wanna be able to remove them when washing the kettle. How can I make the easily removable?

Why do you want to remove them when washing? Either way, directly or with a thermowell, you will have to unscrew the lock nut to remove the sensor of the thermowell from the kettle.
If you only want to be able to pick the kettle and get it out for cleaning you should buy a pt100 probe that has a detachable wire.

I also see these PT100 have three wires. Arent they only supposed to have positive and negative? What to do with the third?
