Sempre me recomendaram inocular o Fermento próximo da temperatura de fermentação primária.
Iniciei a leitura do livro "Yeast". De repente, me deparei com a seguinte afirmação:
" A common technique when working with a slightly undersized pitch of yeast is to carry out the lag phase under warmer conditions. While it may not create off-flavors directly, it can increase some precursors, like alpha acetolactate, which is the precursor for diacetyl. If you are going to pitch the yeast warm, be prepared to warm the beer back up to the same temperature or higher near the end of fermentation. This will help the yeast utilize some of these fermentation compounds and will result in a cleaner beer. Other than these precursors, yeast produce minimal flavor compounds during the lag phase."
O que eu entendi: Na fase Lag Phase, você "PODE" usar a técnica de aumentar a temperatura de inoculação para que as células se muti plicam mais. Como resultado positivo, você tem um maior numero de células viáveis. Em contra partida, vai gerar subprodutos, como dia cetil. Em consequência disto, você via ter que ter uma maturação maior para consumir estes subprodutos.
