Hi all, I just tasted my first white wine after probably 10-12 batches of red.
Same kit company (California connoisseur). Usually at 4 weeks the reds taste okay and become drinkable at about 6. I just tried this white kit at 4 weeks and it's horrible. Tastes like it needs double this amount of time at least if it's ever going to taste good. I use fermentation temp control and pure o2 to areate. Same yeast. What's going on?

Never made a wine from a kit but the kit asked you to aerate with O2? To aerate fruit? Wouldn't that tend to oxidize the fruit? If that's what the kit suggested OK but I guess I would be more than a little surprised.

like green bell peppers, or maybe like geraniums? sorry if i am being very specific but the aromas can mean a big difference. i am just referencing a 3-page list of things it could be. BTW what grape variety is the wine?
