So, I've dried and saved pumpkin seeds from this year's carving rather than toasting them with lots of butter and salt like I normally do. I'm thinking they would make an intriguing beer spice for a 2012 Halloween seasonal brew, but I'm not sure what kind of beer to put them in. Maybe pretend they're like coriander and brew a Belgian pale?
 
I assisted a buddy of mine with a pumpkin ale. He roasted them and added them into his secondary. You should do a pumpkin ale.
 
I don't know of any other commercial breweries using pumpkin seed, but I suspect there are some out there.

Elysian Brewing in Seattle, Wa had a killer pumpkin ale where they pumpkin in the mash, boil, fermenter. They use pumpkin seads in secondary.

If you can check out Elysian's Night Owl. It's very good.
