Can I Stall Lacto?

Doing a lacto kettle sour (first time) with L. brevis. Is it possible to stall the lacto at desired pH then boil to kill at a more convenient time?

Thanks for that . Unfortunately it all went a bit crazy in the middle of the night and over shot my target by morning.
I'm still interested in anyones opinion whether chilling would/wouldn't work. I haven't seen anyone mention it before but it could be useful for when it's just impractical to finish off with a boil.
 
I would recommend to not check the pH at a time when you're unable to act on the result. It only increases risk of contamination.

You could make a small hopped starter and use those ibu's to shut off the lacto.
