Next time you should try to get the temperatures during fermentation up higher into the 80s-90sF and let that beer ferment for a while longer. With 3724 there can often be a large stall phase where it looks like fermentation is done when it actually will ferment further if given time. Try to get the saison down to 1.010 or lower. Can take up to 4-6 weeks or so but you'll be happy you waited. I'm a big saison fan and have brewed a ton of them in my time.

:cross:good advice. switched pilsner extract with maris otter extract and left it in primary for 6 weeks then strait to bottles. loved every drop.also put a heating blanking around the carboy during the 6 weeks.
