    FWIW, I brewed this with US-05 and it was fantastic. Very refreshing. I've had some bad luck with S-04 even with temperature control, so if you haven't used it much, I don't know if I'd try it now.

    I asked a similar question when I started brewing and Revvy said not to worry about going too warm for those first few weeks. It's somewhere way back in this thread I believe. I suppose there is an upper limit but you're not likely to hit it.

    Yeah, I did 5 gallon batches in a 7.5 gallon pot and it was a little nerve-wracking sometimes due to pre-boil volume and the potential for boilovers. Doable for sure, but the bigger the better.

    Mold on carboy??

    Digging this thread up just to share my own experience. I hadn't checked on my latest batch for maybe a week, and in that time, mold has grown in the fermentation chamber and even worked its way into the mouth of the carboy.     Just brewed a variant on this since my first run at it was so good. Using US-05 and the Zythos hops blend. Can't wait to get it bottled next week -- it's getting hot out. :mug:
