    How much to add?

Thanks. Guess it would have been smarter to add it tot ht boil. Apparently I wasn't thinking straight that day. Perhaps I won't add any J.D. to the bottles, but plan to keg 1/2 the batch so maybe I can experiment on that side. Open to suggestions on a test ammount to add to 3 gal...

    How much to add?

Hi Guys, I've seen this brought up, but haven't been able to find any specifics. If there is a thread that covers it directly that I missed, please share the link.... I've got a Christmas Ale going that I wanted to add Jack D. to for a hint of flavor and warm alcohol. Without the J.D., the...

    Blueberries in my hefeweizen

I brewed a strong blueberry ale (about 6.5 % est ABV) and used a grain bag, which cut down on the loss of beer. I will say that this was the first batch I used Nottingham yeast as well and I was shocked at the amount of sedimentation. I even called my wife over to show her. I didn't lose as...

    Crazy Holiday Ale idea

If you weren't dead set on white chocolate, you could try using cocao nibs.

    Crazy Holiday Ale idea

Please don't post the same question in multiple places. ;-) My reply is in the other thread you started.

    Crazy Holiday Ale idea

I don't know about the chocolate syrup. You could I suppose. Nothing wrong with adding cinnamon as it is in many spiced beer recipes, but when I want to add chocolate flavor to my beer I go with a chocolate malt. You could easily do a partial mash using the extract kit with the addition of...

    I think I made a NO NO

I'm not an appliance guy, but I'm curious if you moved it in to your house, then immediately plugged it in? If so, that may be playing a role. I believe you have to let it sit after jostling it around (24 hours I believe). Was it sitting in the elements in your back yard for an entire...

    Williams Brewing Holiday Ale

Their kits don't come with a "recipe" per se. They give you a mylar pouch of LME (unknown what the composition is), and two unnamed pouches of hop plugs. The only identified component of their recipes is the Wyeast pouch.

Do beer brewers brew wine too?

I do beer and wine. I enjoy wine and like making different things. Plus, it keeps the wife happy. ;-)

Inverting Cane Sugar - School Me

Maybe I'm confused. I know that cane & beet are sucrose and that yeast will produce the invertase enzyme then break the sucrose down to glucose and fructose for metabolism. Correct? My recollection is that something about that process can lead to off flavors. This would be the benefit of...

    Prost! from New Hampshire

It's a great state. We just moved back after 9 years away (CT & TX). I'm looking forward to being able to lager, since the weather in Texas was not exactly prime lagering temps.

Inverting Cane Sugar - School Me

Great, thanks! I actually read (skimmed) thru that one once while looking for my answer, but threw my hands in the air when I read " a pinch of citric acid..." I will try the 1 tsp / cup route. If anyone else has any other input on type of acid and ratio to sugar, I'm open to all...

Inverting Cane Sugar - School Me

Hi All: Been lurking for a while, brewing and wine making on and off since early 2002. I'm fond of Belgian biers and have a Triple on the schedule for later this week. Candi Sugar gets expensive, as I'm sure y'all know. Anyhow, before I ramble on... I was inspired by this thread a...

    Prost! from New Hampshire

Been lurking for a while, been brewing and making wine on and off since 2001 / 2002. I find when I'm digging for an answer or description related to brewing I always end up here lately finding the answer. Looking forward to spending more time on here and hopefully I can make a positive...
