I would split the batch. Dose half again with an amount that doesn’t surpass ppm limits of sulfite and sulfate content, when accounting for your previous addition. Tricky situation.

I had a 2015 Bourbon County Barleywine from Goose Island just the other week. A present from a friend for my 21st birthday. I thought it was quite tart, almost as if it was intentionally soured.
